Shredded Greek Chicken Pizza

ingredients

2 Maple Leaf Prime® chicken breasts
1 16 inch prepared pizza base
1 ½ cup hummus
1 cup romaine lettuce, shredded
¾ cup kalamata olives, roughly chopped
1 cup cherry tomato, halved
½ cup cucumber, diced
1 cup roasted red peppers, sliced
¾ cup feta cheese, crumbled
1 tsp paprika
1 tbsp (15 mL) olive oil
Salt
Pepper

directions

1. Preheat oven to 375 degrees

2. Season chicken breast with olive oil, salt and pepper.

3. Place chicken on a parchment lined baking sheet and cook for 18 to 20 minutes or until internal temperature reaches 165 degrees. Allow to cool slightly. Using two forks shred chicken apart.

4. Assemble pizza by spreading pizza base with hummus.

5. Arrange shredded chicken on top followed by lettuce, tomato, olives, cucumber and peppers. Sprinkle cheese over top and sprinkle with paprika.
