Orange Cranberry Skillet Chicken

ingredients

4 Maple Leaf Prime® Raised without Antibiotics Chicken Thighs
5 Maple Leaf Prime® Raised without Antibiotics Chicken Drumsticks
1 tbsp (15 mL) vegetable oil
2 cloves garlic, minced
Juice and zest of 1 seedless orange, flesh reserved
¼ cup (60 mL) honey
¼ cup (60 mL) chicken stock
2 shallots, fine dice
1 340 gram package frozen whole cranberries, thawed
2 sprigs fresh rosemary
3 sprigs fresh thyme
1 tbsp salted butter
Salt and Pepper

directions

1. Place chicken in a large bowl.

2. Cut orange into quarters and squeeze over chicken. Add zest, garlic, honey, chicken stock and salt and pepper. Toss well to coat.

3. Heat oil in a large non stick skillet over medium high heat. Brown chicken on both sides and remove onto a platter.

4. Add shallots and herbs to pan. Stir frequently until onion has started to soften.

5. Deglaze pan with residual orange honey marinade. Add the quartered squeezed oranges to pan along with the cranberries.

6. Return chicken to pan and reduce heat. Add butter and stir to combine.

7. Cover and simmer for about 30 to 40 minutes or until and internal temperature of 165 degrees is reached.
