Feta Bruschetta Chicken Breasts

ingredients

4 Maple Leaf Prime® Raised Without Antibiotics Chicken Breasts
4 tbsp Crumbled feta cheese
24 Leaves baby spinach
Salt and pepper
4 tbsp (60 mL) Olive oil
½ cup Bruschetta

directions

1. Preheat oven to 375°F (190°C).

2. Using a sharp knife cut a slit in the side of each chicken breast to form a pocket. Stuff each pocket with a quarter of the feta cheese and the spinach. Secure closed with a wooden toothpick. Season the chicken with salt and pepper.

3. Heat oil in a skillet over medium-high. Add chicken and sear on each side for 1-2 minutes or until golden brown. Transfer to an ovenproof baking dish and bake in preheated oven for 18-20 minutes or until the internal temperature of the chicken reaches 165°F (74°C).

4. Remove toothpicks and serve each chicken breast topped with a heaping spoonful of bruschetta.
